Cinnamon Toast and Sweet Yoghurt Bowl

Hi guys,

I wanted to share with you a recipe I whipped up for hubby and I after a early morning beach run with my running group on Tuesday. I had all the ingredients already in the house and it was an excellent post workout meal full of all the essential macro nutrients you need to replenish.

 

Ingredients:

 

  • 2 eggs
  • 2 pieces of wheat or sour dough bread
  • Cinnamon
  • 3 tablespoons of plain yoghurt
  • Half a cup of frozen berries
  • 1 tablespoon of crushed pecans
  • ½ tspn of coconut oil

 

Method:

  1. Crack the eggs
  2. Sprinkle a little cinnamon and whisk well
  3. Soak the bread until it has soaked up all the egg
  4. Heat a non-stick fry pan with half a teaspoon of coconut oil
  5. Cook for 1 minute on each side or until golden brown
  6. Take bread out and replace with the frozen berries and cook for about 20 seconds
  7. Drizzle some honey on the bread
  8. Take the 3 tablespoons of yoghurt and mix with the berries and walnuts
