
12 Aug Guilt Free Snack/Dessert
So on the weekend I came up with an idea for a low calorie treat for pretty much all occasions! I love coming up with delicious treats that don’t leave me feeling ‘too’ guilty and this one is a winner!
These honey and cinnamon stewed apples are simply delectable. They are also perfectly vegan, low in sugar and so versatile.
Ingredients:
4-6 apples cored (since we aren’t using any sugar in this recipe its best to stick with a sweeter type of apple. I use pink lady as opposed to an apple like a granny smith)
Dollop of honey
1 teaspoon of ground cinnamon
2 teaspoons of vanilla essence
1 cup of boiling water
Peel, core and chop the apples and set aside. Heat a large thick bottom pot with a fitted lid over high heat. Dust apples with cinnamon and add to the pot.
Pour over hot water, add honey and vanilla and stir to combine.
Pop the lid on and leave to simmer for about 20 minutes or so on medium heat or until apples are fully cooked. If you feel they are a bit watery add some cornflour to thicken. But whatever you do, don’t drain that liquid away! It forms this wonderful cinnamon honey that tastes oh-so fine.
Here are a couple of things you could do with this super deliciousness:
- Serve it as an apple sauce
- Pop it into a baked pie crust for a delish apple pie and serve with a dollop of greek yogurt
- Pop into a greased baking dish and cover with a mixture of oats, flour, butter and sugar for a perfect apple crisp
- Layer between cake batter for apple cake
- Warmed with a dollop of vanilla bean greek yogurt
- Makes a mean smoothie + yogurt + soy milk or regular + banana= Yummo
- OR what I do and pop it in your morning breakfast cereal of put it on french toast
