oatmeal cookie

Fruity Oatmeal Cookies

 

Ingredients:oatmeal cookie

 

10 dates pitted

½ cup orange juice

2 tablespoons of olive oil

1 ½ cups rolled oats

1 cup sultanas

½ cup chopped nuts

¼ teaspoon cinnamon

1 large egg white

 

Cooking Intructions:

  1. Preheat the oven to 180 degrees. Coat a non stick pan with coconut oil

  2. 2. Combine the dates and juice in a small saucepan. Bring to a simmer over low heat and continue to simmer until the fruit has softened, about 15 minutes.

  3. Place the mixture in a blender or food processor and puree. Pour it into a mixing bowl and add the oil, oats, sultanas, chopped nuts and cinnamon and stir to mix.

  4. 4. In a separate bowl, lightly beat the egg. Fold gently into the cookie mixture. Drop the batter by the tablespoon onto the prepared backing tray.

  5. Bake until lightly browned, 10 to 12 minutes.
